Beachwood Pizza Honors Late Chef John Ash with Special Menu

URGENT UPDATE: Beachwood Pizza & Beer is launching a special menu in Huntington Beach to honor the late Chef John Ash, widely recognized as the father of Wine Country cuisine. This limited-time offering will be available from October 23 to November 2, featuring dishes inspired by Ash’s iconic cookbook, “From Earth to Table.”

Chef Ash, who passed away at the age of 83 in August, was a pioneer of sustainable cooking, advocating for local and seasonal ingredients. His influence continues to resonate with chefs and food enthusiasts alike. Gabriel Gordon, owner of Beachwood, expressed deep admiration for Ash, stating, “John was the godfather of wine country cuisine and a huge influence on me growing up in Santa Rosa.”

The new menu will include three standout dishes, each reflecting Ash’s culinary philosophy. The Earth To Table Sourdough Pizza features Bechamel sauce, mozzarella, Dutch brie, Canadian bacon, portabella mushrooms, and caramelized onions—a dish that chef Ashley Arias describes as “like putting a charcuterie board on a pizza.”

Additionally, diners can enjoy the wine-braised chicken Orecchiette, made with creamy wine-braised chicken, pasta, herbed Shiitake mushrooms, sun-dried tomatoes, and parmesan. “It’s super herbie, super savory,” Arias commented, highlighting the dish’s richness.

For dessert, the restaurant will serve Spiced Wine Poached Pears, poached in the same white wine Ash championed in his book. “It’s tender but still full of texture,” Arias said, emphasizing the dish’s delightful balance.

This tribute to Chef Ash not only celebrates his culinary legacy but also invites the community to experience the flavors he cherished.
